Recipe: Tony’s Spicy Beef Tacos

(I developed this recipe while living in Mexico)

(serves 4)

-1 lb. ground steak or beef

-crispy corn tortillas (or tortilla chips), or flour tortillas

-shredded Cheddar Cheese, Monterey Jack Cheese, or 4-cheese Mexican

-sour cream

-shredded lettuce

Tony’s homemade Taco seasoning per 1-lb beef:

-2 tbsp chili powder

– 1/8 tsp garlic powder

-1/2 tsp salt

-1/2 tsp ground cumin

-1/8 cup dried chopped onion

-1 tsp crushed red pepper (more or less for taste)

-1/2 tsp onion powder

-1/2 tsp black pepper

-1 cup water

(This is much better than the store-bought seasoning)

-brown beef in large skillet, drain any fat

-if using diced onion, add to beef while browning

-add all spices to water, mix well

-pour mix into skillet, stir well

-bring to a boil

-reduce heat to simmer and simmer uncovered until excess water is cooked off, stirring occasionally

-serve on crisp corn tortillas, soft flour tortillas, or tortilla chips with sour cream, shredded cheddar cheese, and homemade salsa

Note, best served like this:

1-dollop with generous amount of sour cream and spread around tortilla shell

2-add taco meat on top of sour cream (helps minimize spillage)

3-add salsa

4-add shredded lettuce

3-add shredded Cheddar Cheese, Monterey Jack Cheese, or 4-cheese Mexican

5-sprinkle with hot sauce if desired
